The flavour of the chicharrón is very reminiscent of carne mechada (larded meat), but much juicier.
Recommendation: slice the chicharrón and serve with a few drops of freshly squeezed lemon and a pinch of coarse salt. They are also delicious in thinly sliced sandwiches, and if you want to try them, warm the bread a little and add a slice of semi-cured cheese from the Sierra de Cádiz and they are also exquisite.
