This vinegar is obtained after ageing in American oak casks from Palomino Fino sherry wines, aged between five and ten years.
It is a high-quality reserve vinegar, mahogany in colour, with a caramel and vanilla flavour and unique characteristics that make it indispensable in gourmet cuisine all over the world. This vinegar is made using the "Solera System", a traditional method used in the ageing of sherry wines, and it is in the ageing Solera where it acquires its typical characteristics of smell and flavour after the traditional ageing process in oak barrels.
If there is a vinegar that is typical of Spanish cuisine, it is Páez Morilla's Reserva 25 años. Its origins date back to 1910, when Don Francisco Páez Sánchez, grandfather of the current owners of the firm, founded a wine recreational society called "Los Palitos".
