Since 1882, when Spain´s King Alfonso XII granted it the title of official supplier to the Royal Household, Boffard Reserva has been closely linked to the highest quality standards.
Boffard Reserva is made in Valladolid with 100% raw sheep's milk. It is matured for a minimum of eight months in cellars. During its maturation time it is turned, brushed and bathed in oil three times according to the traditional recipe of the Castilian shepherds. This olive oil protects the cheese during the ripening process, and gives Boffard cheese its unique and unmistakable taste.
A very generous cheese, with a distinct nutty, slightly savoury and spicy flavour. Boffard Reserva cheese is well balanced, and lingers on the palate. Allow it to breathe at room temperature a short while before eating, and pair it with a good red wine, like Rioja or Ribera del Duero.
